Panna Cotta

Coconut Mocha

2 cups Cha’s Coconut Milk
1 orange, juice and finely grated zest
1/4 cup sugar
2 tbsp Malibu Rum (optional)
3 Dr. Oetker Gelatin Sheets

Mocha Layer

1 cup Cha’s Coconut Milk
1/4 cup Muskoka Coffee, cold
1 tbsp instant coffee
2 tbsp cocoa powder
2 tbsp sugar
2 Dr. Oetker Gelatin Sheets

Put the coconut milk, orange juice, zest, sugar and rum into a small sauce pan and slowly simmer for 10 minutes. Remove from the heat.

Soak the gelatin sheets in cold water as per package directions. Once the gelatin sheets are soft, wring them out gently to remove the water. Add gelatin sheets into the room temperature coconut mixture and stir until dissolved. Pour the mixture slowly into 4 martini glasses. Allow to cool. Cover with plastic wrap and refrigerate. Chill for at least one hour.

In the same sauce pan, put the coconut milk, coffee instant coffee, cocoa powder and sugar and simmer for 10 minutes. Cool to room temperature and add gelatin sheets. Stir until dissolved. As soon as the coconut layer is set, slowly pour the cooled mocha layer over it. Recover and refrigerate until the second layer is set, about 45 minutes. Garnish with curled orange zest.
