Honey Ginger Baklava

1 pkg phyllo dough
1/2 lb butter
1 lb nuts
1 tsp cinnamon
3/4 cup sugar
3/4 cup water
1/4 cup Ginger People Ginger Syrup
1 finger ginger, peeled and sliced
1/2 cup honey

Preheat oven to 350°F.

Butter a 9×13 oven-proof dish. Pulse nuts, and cinnamon in a food processor. Melt butter and keep warm. Open the dough and cover with a damp cloth (it dries quickly becoming crumbly and unusable.) Working quickly, brush a sheet of phyllo with butter and place another sheet over top, butter again and add another sheet. Five sheets per layer and 10 for the top layer.

Place one layer (5 buttered phyllo sheets) in the dish. Add a layer of nuts, another phyllo layer, the rest of the nuts and the final 10 sheets of phyllo. Cut on the diagonals into diamonds before baking for approximately 50 minutes or golden on top.

In a pot boil water, ginger and sugar, remove from heat. Discard ginger, and add ginger syrup and honey. Let cool slightly then pour over the baklava as it comes hot from the oven.
