Bûche De Noël (Yule Log)

Chocolate Walnut


1 cup walnuts
1/4 cup flour
1/3 cup Green and Black Organic Cocoa Powder
5 eggs, separated
1/4 tsp salt
1/4 tsp cream of tartar
2/3 cup granulated sugar


2 cups 35% cream
2 tbsp icing sugar

Dark Chocolate Glaze

1 100g bar Ritter Sport 50% Dark Chocolate
2 tbsp 35% cream
1 tbsp Stirling Unsalted Butter

Grind walnuts fine in a blender. Mix with flour and cocoa. Beat egg whites, salt and cream of tartar until barely stiff. Gradually beat in 1/3 cup sugar. With the same beaters, beat yolks and remaining sugar until thick. Pour over egg whites and gently fold together. Gradually fold in walnut mixture.

Pour into a 10” x 15” x 1” pan, lined on bottom with parchment paper. Bake at 350°F for 20 minutes until top springs back when touched lightly. Turn out onto cloth, sprinkled with icing sugar. Roll up loosely in cloth and cool. When cold, gently unroll and spread with sweetened whipping cream and re-roll. Pour chocolate glaze over top letting it drip down sides. Decorate with shaved chocolate.


Microwave all ingredients in a microwavable bowl on High 1 to 2 minutes, or until butter is melted. Stir until chocolate is completely melted and mixture is smooth. Glaze should be thick but able to pour easily.
